In honor of our recent trip to Kenya, I thought it would be fun to share a recipe for a traditional Kenyan dish called Sukuma Wiki. Now this is a great meal anytime, but especially if the budget is tight and you need something tasty that won't cost a fortune. The dish literally means “push the week,” which is like stretching the budget. Most Kenyans only get paid once a month, and near the end of that last week they need to push to get to their next paycheck so they make dishes like sukuma wiki to help those last shillings go farther.
